Ingredients

  • 4 medium Ripe tomatoes
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Mustard seeds
  • 4 cloves Garlic
  • 1 inch piece Fresh ginger
  • 1 small Green chili
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Salt
  • 2 teaspoons Sugar
  • 2 tablespoons Cilantro leaves
  • 1 tablespoon Lemon juice

Directions

Step 1

Wash the tomatoes and chop them roughly into small pieces. Set aside.

Step 2

Peel the garlic cloves and ginger. Finely mince the garlic, ginger, and green chili. If desired, deseed the chili to reduce heat.

Step 3

Heat vegetable oil in a pan over medium heat.

Step 4

Add cumin seeds and mustard seeds to the hot oil and let them splutter for about 30 seconds.

Step 5

Add the minced garlic, ginger, and green chili to the pan. Sauté for 1-2 minutes until fragrant.

Step 6

Stir in the chopped tomatoes and cook for 5 minutes, stirring occasionally, until the tomatoes soften and begin to break down.

Step 7

Add turmeric powder, red chili powder, coriander powder, and salt to the pan. Mix well to coat the tomatoes with the spices.

Continue cooking for another 5-7 minutes, mashing the tomatoes gently with a spatula, until the chutney thickens and the oil starts to separate.

Add the sugar and adjust salt to taste. Stir and cook for 1 more minute.

Remove the pan from heat and let the chutney cool slightly.

Stir in the lemon juice for a fresh and tangy flavor.
