Ingredients

  • 8 cups Fresh spinach
  • 2 tablespoons Avocado oil (or any neutral cooking oil)
  • 3 cloves Garlic, minced
  • 1 teaspoon Fresh ginger, minced
  • 1 tablespoon Lemon juice
  • 0.5 teaspoons Sea salt
  • 0.25 teaspoons Cracked black pepper
  • 0.25 teaspoons Red pepper flakes (optional)

Directions

Step 1

Wash the spinach thoroughly under cold water to remove any grit or dirt. Drain and pat dry with a clean towel or use a salad spinner.

Step 2

Heat a large skillet or wok over medium heat, then add the avocado oil.

Step 3

Once the oil is hot but not smoking, add the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant, being careful not to burn them.

Step 4

Add the fresh spinach to the skillet in batches, stirring continually to allow the heat to wilt the leaves evenly. Continue adding spinach as the previous batch cooks down.

Step 5

Season the spinach with sea salt, black pepper, and red pepper flakes (if using). Stir well to distribute the seasoning.

Step 6

Cook for 3–5 minutes or until the spinach is fully wilted but still vibrant green.

Step 7

Remove the skillet from heat and drizzle lemon juice over the cooked spinach. Toss gently to mix.

Step 8

Transfer the stir-fried spinach to a serving bowl and serve warm as a side or light main dish.
