Ingredients

  • 8 ounces Rice noodles
  • 2 tablespoons Sesame oil
  • 1 medium Carrot, julienned
  • 1 medium Bell pepper, thinly sliced
  • 2 cups Broccoli florets
  • 3 stalks Green onions, sliced
  • 3 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 3 tablespoons Coconut aminos
  • 1 tablespoon Lime juice
  • 2 tablespoons Vegetable broth
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.25 teaspoons Crushed red chili flakes (optional)

Directions

Step 1

Cook the rice noodles according to the package instructions, then drain and rinse with cold water. Set aside.

In a small bowl, mix together the coconut aminos, lime juice, vegetable broth, salt, black pepper, and crushed red chili flakes (if using). Set the sauce aside.

Heat a large skillet or wok over medium-high heat. Add sesame oil and swirl to coat the pan.
