Ingredients

  • 1 pound Beef (sirloin or flank steak, thinly sliced)
  • 3 medium Green bell peppers (sliced into strips)
  • 3 cloves Garlic (minced)
  • 1 teaspoon Fresh ginger (grated)
  • 1 medium Onion (thinly sliced)
  • 3 tablespoons Coconut aminos (soy-free alternative to soy sauce)
  • 0.25 cup Beef broth (low-sodium)
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Honey (or maple syrup for a vegan substitution)
  • 1 teaspoon Cornstarch
  • 2 tablespoons Water
  • 1 teaspoon Sesame oil (to enhance flavor)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Neutral cooking oil (such as avocado or canola oil)

Directions

Step 1

In a small bowl, mix coconut aminos, beef broth, rice vinegar, honey (or maple syrup), sesame oil, cornstarch, and water. Stir until cornstarch dissolves completely, and set aside.

Step 2

Season the sliced beef with salt and black pepper. Toss to coat evenly.

Step 3

Heat 1 tablespoon of the neutral cooking oil in a large skillet or wok over medium-high heat. Once the oil is hot, add the beef in a single layer. Cook for 2-3 minutes on each side until browned and just cooked through. Remove the beef from the skillet and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of neutral cooking oil. Add the minced garlic, grated ginger, and sliced onion. Stir-fry for about 1 minute until fragrant.

Step 5

Add the green bell peppers to the skillet. Cook for 3-4 minutes, stirring frequently, until they are tender-crisp.

Step 6

Return the cooked beef to the skillet. Pour the sauce mixture over the beef and vegetables. Stir well to coat everything evenly.

Step 7

Cook for an additional 2-3 minutes, allowing the sauce to thicken and coat the ingredients.

Step 8

Remove from heat and serve immediately. Pair with steamed rice or your favorite grain, if desired.
