  • 1 lb Flank steak
  • 3 tbsp Olive oil
  • 2 tbsp Lime juice

  • 1 tsp Chili powder
  • 1 tsp Paprika
  • 1 tsp Garlic powder
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 Red bell pepper
  • 1 Green bell pepper
  • 1 Yellow bell pepper
  • 1 medium Yellow onion
  • 8 Corn tortillas
  • 1 Avocado
  • 0.25 cup Fresh cilantro
  • 0.5 cup Salsa (optional)

Directions

Step 1

Trim any excess fat from the flank steak and slice it into thin strips against the grain.

Step 2

In a small bowl, whisk together olive oil, lime juice, cumin, chili powder, paprika, garlic powder, salt, and black pepper to create the marinade.

Step 3

Pour the marinade into a plastic zip-top bag or a shallow dish. Add the steak strips and toss to coat. Marinate in the refrigerator for at least 15 minutes, or up to 2 hours for extra flavor.

While the steak marinates, thinly slice the red, green, and yellow bell peppers, as well as the yellow onion.
