Ingredients

  • 2 large eggs

  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil

Directions

Step 1

Wash the fresh spinach thoroughly and chop it into small pieces.

In a large mixing bowl, whisk the eggs until well beaten.

Add the chopped spinach, chickpea flour, finely chopped onion, minced garlic, ground cumin, smoked paprika, salt, and black pepper to the bowl with the eggs. Mix everything until well combined and a thick batter forms.
