Ingredients

  • 4 cups Baby spinach
  • 2 cups Arugula
  • 1 medium Cucumber
  • 1 cup Cherry tomatoes
  • 1 large Avocado
  • 0.25 cup Red onion
  • 0.5 cup Walnuts
  • 3 tablespoons Fresh lemon juice
  • 4 tablespoons Extra virgin olive oil
  • 1 teaspoon Maple syrup
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and thoroughly dry the baby spinach and arugula. Place them in a large salad bowl.

Step 2

Slice the cucumber into thin rounds, halve the cherry tomatoes, and dice the avocado into small cubes. Thinly slice the red onion into slivers. Add these vegetables to the salad bowl.
