Ingredients

  • 1 pound Large shrimp, peeled and deveined
  • 2 tablespoons Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Paprika
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Lime juice
  • 2 cups Cooked white or brown rice
  • 1 cup Black beans, drained and rinsed
  • 0.75 cup Fresh salsa (your choice of spiciness)
  • 1 whole Avocado, diced
  • 0.25 cup Fresh cilantro, chopped
  • 4 pieces Tortilla wraps, large (soy-free)

Directions

Step 1

In a medium-sized bowl, combine olive oil, chili powder, paprika, ground cumin, garlic powder, salt, black pepper, and lime juice to create a marinade.

Step 2

Add the shrimp to the bowl and toss thoroughly to coat evenly. Let the shrimp marinate for 10 minutes while preparing other ingredients.

Step 3

Heat a large skillet over medium-high heat. Once hot, add the shrimp and cook for 2-3 minutes on each side or until they turn pink and opaque. Remove from heat and set aside.

Step 4

Warm the tortilla wraps in a dry skillet over medium heat for about 30 seconds on each side or until pliable. Alternatively, wrap them in a damp paper towel and microwave for 15-20 seconds.

Step 5

Assemble the burritos by spreading 1/2 cup of cooked rice onto the center of each tortilla wrap.

Step 6

Add 1/4 cup of black beans, a few spoonfuls of salsa, and a layer of diced avocado on top of the rice.

Step 7

Place 3-4 cooked shrimp onto the filling, then sprinkle with fresh cilantro.

Step 8

Fold the sides of the tortilla inward and roll it up tightly from the bottom to form a burrito. Repeat the process with the remaining tortillas and filling.

Step 9

Serve immediately and enjoy your Soy-Free Spicy Shrimp Burrito!
