Ingredients

  • 2 large Egg yolks
  • 2 tablespoons Lemon juice
  • 1 teaspoon Apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 cup Avocado oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Cayenne pepper
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Honey (optional, for balance)

Directions

Step 1

In a medium mixing bowl, whisk together the egg yolks, lemon juice, apple cider vinegar, and Dijon mustard until fully combined and smooth.

Step 2

While whisking continuously, very slowly drizzle in the avocado oil, starting with just a few drops at a time. Make sure the oil is fully incorporated before adding more to avoid separation. Once about half the oil has been added, you can increase the speed of the pour slightly.

Step 3

Continue whisking and adding oil until the mixture thickens into a creamy mayonnaise consistency.

Step 4

Whisk in the garlic powder, smoked paprika, cayenne pepper, salt, and honey (if using) until well combined.

Step 5

Taste and adjust the seasoning as needed. Add a little more cayenne for extra heat or a pinch more salt for balance.

Step 6

Transfer the spicy mayonnaise to a clean jar or airtight container. Store in the refrigerator for up to one week.
