Ingredients

  • 500 g All-purpose flour
  • 50 g Granulated sugar
  • 7 g Salt
  • 7 g Instant yeast
  • 250 ml Full-fat dairy milk (or plant-based soy-free milk alternative, e.g., oat or almond milk)
  • 60 g Unsalted butter
  • 2 large Eggs
  • 30 ml Water
  • 20 g Butter (extra, melted, for brushing)

Directions

Step 1

In a medium saucepan, gently warm the milk over low heat until lukewarm (about 37°C or 98°F). Do not overheat.

Step 2

Add the butter to the warm milk and allow it to melt. Stir occasionally until combined. Set aside to cool slightly.

Step 3

In a large mixing bowl, combine the flour, sugar, salt, and instant yeast. Mix thoroughly to distribute the ingredients evenly.

Step 4

Add the lukewarm milk and butter mixture to the dry ingredients, followed by the eggs and water.

Step 5

Knead the dough either by hand for 8–10 minutes or using a stand mixer with a dough hook attachment for 5–6 minutes. The dough should be slightly sticky but smooth and elastic.

Step 6

Lightly oil a clean bowl and place the dough inside. Cover the bowl with a damp kitchen towel or plastic wrap. Let the dough rise in a warm, draft-free location for about 1 hour, or until doubled in size.

Step 7

Once the dough has risen, gently punch it down to release any air bubbles. Turn it onto a lightly floured surface.

Step 8

Divide the dough into 12 equal pieces and shape each piece into a smooth ball.

Step 9

Place the dough balls on a lined or greased baking sheet, spacing them evenly apart to allow for rising. Cover the baking sheet with a clean kitchen towel and let the buns rise again for 30 minutes, or until they are visibly puffy.

Step 10

Preheat your oven to 190°C (375°F) during the second rise.

Step 11

Bake the buns in the preheated oven for 16–18 minutes, or until golden brown on top.

Step 12

Brush the tops of the warm buns with melted butter immediately after removing them from the oven to give them a shiny, soft finish.

Step 13

Allow the buns to cool slightly before serving. Enjoy them fresh, or store in an airtight container for up to 2 days.
