  • 2 cloves Minced garlic
  • 2 tablespoons Chili powder
  • 1 teaspoon Ground cumin
  • 1 can (14 oz) Diced tomatoes
  • 2 tablespoons Tomato paste
  • 2 cups Chicken broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 0.25 cup Chopped fresh cilantro
  • 1 sliced Avocado (optional)
  • 0.5 cup Sour cream (optional)

Directions

Step 1

Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent, about 3-5 minutes.

Add the ground beef to the skillet. Cook, breaking it up with a spatula, until it is browned all over, about 7-10 minutes. Drain any excess fat.

Stir in the black beans, chili powder, and ground cumin. Cook for another 2-3 minutes until the mixture is well combined and heated through. Set this beef and bean mixture aside.

To make the enchilada sauce, in a medium saucepot, combine the diced tomatoes, tomato paste, chicken broth, salt, and black pepper. Bring to a simmer over medium heat and cook for about 15 minutes, stirring occasionally, until slightly thickened.
