Ingredients

  • 500 grams fresh squid
  • 3 tablespoons olive oil
  • 1 whole lemon
  • 2 tablespoons fresh parsley
  • 2 tablespoons fresh cilantro
  • 2 cloves garlic
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon red pepper flakes

Directions

Step 1

Clean the squid by removing the innards, beak, and quill. Rinse under cold water, and cut each squid into rings about 1 cm thick. Pat dry with a paper towel.

Step 2

Mince the garlic cloves and finely chop the fresh parsley and cilantro. Set aside.

Step 3

In a bowl, combine olive oil, minced garlic, chopped parsley, chopped cilantro, salt, black pepper, and red pepper flakes to form a marinade.

Step 4

Zest the lemon and mix the zest into the marinade. Cut the lemon in half and squeeze its juice into the marinade, removing any seeds.

Step 5

Place the squid rings into the marinade and gently toss to ensure they're well coated. Allow them to marinate for 10 minutes.

Step 6

While the squid is marinating, preheat a grill or grill pan over medium-high heat.

Step 7

Once the grill is hot, place the squid rings on the grill in a single layer. Grill for about 2-3 minutes on each side or until they are opaque and have grill marks.

Step 8

Remove the squid from the grill and transfer to a serving platter.

Step 9

Drizzle any remaining marinade over the grilled squid.

Step 10

Serve immediately with additional lemon wedges on the side if desired.
