Ingredients

  • 250 g shrimp
  • 50 g water chestnuts
  • 1 tsp fresh ginger
  • 3 stalks scallions
  • 2 cloves garlic
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 30 pieces wonton wrappers
  • 1 tbsp cornstarch
  • 2 tbsp water

Directions

Step 1

Finely chop the shrimp and transfer to a large mixing bowl.

Step 2

Dice the water chestnuts and add them to the bowl with the shrimp.

Step 3

Grate or mince the ginger and add it to the shrimp mixture.

Step 4

Chop the scallions and garlic finely and add them to the bowl.

Step 5

Add sesame oil, rice vinegar, salt, and black pepper to the shrimp mixture and mix thoroughly until well combined.

Step 6

In a small bowl, mix the cornstarch with water to create a thin paste.

Step 7

Place a wonton wrapper on a clean surface. Keep the other wrappers covered to prevent them from drying out.

Step 8

Spoon about a teaspoon of the shrimp mixture onto the center of the wrapper.

Step 9

Dip your finger into the cornstarch paste and brush along the edges of the wrapper to moisten.

Step 10

Fold the wrapper in half diagonally to form a triangle, pressing well to seal the edges.

Step 11

Bring the two corners towards each other around the filling and press to seal.

Step 12

Continue this process with the remaining wontons.

Step 13

Fill a pot with water and bring to a rolling boil.

Step 14

Add wontons in batches to the boiling water, being careful not to overcrowd the pot.

Step 15

Boil the wontons for about 4-5 minutes, until they float to the surface and the shrimp filling is cooked through.

Step 16

Remove wontons from the pot using a slotted spoon and let them drain.

Step 17

Serve the wontons warm with your choice of dipping sauce or in broth.
