Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 6 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 0.5 teaspoon red pepper flakes
  • 0.5 cup dry white wine
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon capers, drained
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon sea salt

Directions

Step 1

In a large skillet over medium heat, melt 2 tablespoons of the butter with the olive oil.

Step 2

Add the minced garlic and red pepper flakes, and cook for about 1 minute until the garlic is fragrant but not browned.

Step 3

Increase the heat to medium-high, then add the shrimp to the skillet. Cook for about 2-3 minutes, stirring occasionally, until the shrimp start to turn pink.

Step 4

Remove the shrimp from the skillet and set them aside.

Step 5

In the same skillet, pour the white wine, scraping up any browned bits from the bottom of the pan. Let it simmer and reduce by half, about 2-3 minutes.

Step 6

Stir in the lemon juice, lemon zest, and capers.

Step 7

Add the remaining 4 tablespoons of butter to the skillet, swirling to melt and incorporate it into the sauce.

Step 8

Return the shrimp to the skillet and cook for another 1-2 minutes until they are opaque and fully cooked.

Step 9

Stir in the chopped parsley, sea salt, and black pepper.

Step 10

Toss the shrimp and sauce together to ensure they are well coated.

Step 11

Serve the shrimp scampi sauce over pasta or with crusty bread, garnishing with additional parsley if desired.
