Begin by cooking the jasmine rice according to package instructions, ideally the day before, and refrigerate until cold. Cold rice works best for fried rice as it prevents clumping.
In a large non-stick skillet or wok, heat 1 tablespoon of canola oil over medium-high heat. Add shrimp and scallops and sauté until they turn opaque and are just cooked through. Remove them from the skillet and set aside.
