Ingredients

  • 250 grams Rice noodles
  • 3 tablespoons Sesame oil
  • 8 pieces Scallions
  • 4 pieces Garlic cloves
  • 1 inch piece Ginger
  • 2 tablespoons Black vinegar
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground white pepper
  • 2 tablespoons Toasted sesame seeds
  • 1 teaspoon Red chili flakes

Directions

Step 1

Bring a large pot of water to a boil and cook the rice noodles according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.

Step 2

Thinly slice the scallions, separating the white parts from the green parts. Set aside.

Step 3

Mince the garlic cloves and finely grate the ginger.

Step 4

In a large skillet or wok, heat 2 tablespoons of sesame oil over medium heat. Add the white parts of the scallions, garlic, and ginger. Sauté for about 2-3 minutes until fragrant.

Add the cooked rice noodles into the skillet, tossing them with the sautéed scallions, garlic, and ginger to combine.

Pour in the black vinegar, remaining 1 tablespoon of sesame oil, salt, and ground white pepper. Stir well to ensure the noodles are evenly coated with the seasonings.
