Ingredients

  • 3 tablespoons Olive oil
  • 1 pound Boneless chicken thighs, cut into 1-inch pieces
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 medium Onion, diced
  • 3 cloves Garlic cloves, minced
  • 2 medium Carrots, diced
  • 4 cups Chicken broth
  • 1.5 cups Long-grain white rice, rinsed and drained
  • 1 leaf Bay leaf
  • 0.5 teaspoon Ground turmeric
  • 0.5 teaspoon Ground cumin
  • 0.25 cup Fresh parsley, chopped
  • 1 unit Lemon wedges, for serving

Directions

Step 1

In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat.

Step 2

Season the chicken pieces with salt and black pepper.

Step 3

Add the chicken to the pot and cook until browned on all sides, about 5-7 minutes. Remove the chicken and set aside.

Step 4

In the same pot, add the remaining 1 tablespoon of olive oil, onion, and garlic. Sauté for 2-3 minutes until the onion becomes translucent.

Add the diced carrots and cook for another 2 minutes.

Step 6

Pour in the chicken broth and bring to a simmer.

Stir in the rice, bay leaf, turmeric, and cumin. Return the browned chicken pieces to the pot.
