  • 2 tablespoons fresh parsley

Directions

Step 1

Start by cooking the rice. Rinse 1 cup of white rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and 2 cups of beef broth. Bring to a boil over high heat, then reduce to low, cover, and let it simmer for about 15 minutes or until the liquid is absorbed and the rice is tender. Remove from heat and let it sit, covered, for another 5 minutes.

Step 2

While the rice is cooking, prepare the other ingredients. Finely chop 1 medium onion, mince 3 garlic cloves, and dice 1 medium red bell pepper. Chop 2 tablespoons of fresh parsley for garnish and set aside.
