Ingredients

  • 2 hearts Romaine lettuce
  • 1 cup Cherry tomatoes

  • 1 cup Black beans (canned, drained and rinsed)
  • 1 cup Corn kernels
  • 1 large Avocado
  • 0.5 small Red onion
  • 0.5 cup Cilantro leaves
  • 2 large Lime
  • 0.25 cup Olive oil
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and dry the romaine lettuce hearts thoroughly. Chop them into bite-sized pieces and place in a large salad bowl.

Step 2

Halve the cherry tomatoes and add them to the bowl.

Step 3

Peel and dice the cucumber. Add to the salad bowl.

Step 4

Core and dice the red bell pepper. Add to the bowl.

Add the drained and rinsed black beans and corn kernels to the salad.
