Ingredients

  • 1000 grams Pork shoulder, boneless and skinless
  • 200 grams Pork fat, diced
  • 250 milliliters Water
  • 150 milliliters Dry white wine
  • 3 pieces Garlic cloves, minced
  • 10 grams Salt
  • 5 grams Black pepper, freshly ground
  • 2 pieces Bay leaves
  • 1 teaspoon Thyme, dried
  • 0.5 teaspoon Nutmeg, ground

Directions

Step 1

Cut the pork shoulder into small cubes, about 3-4 cm in size.

Step 2

In a large heavy-bottomed pot, combine the pork cubes, diced pork fat, water, and dry white wine.

Step 3

Add the minced garlic, salt, freshly ground black pepper, bay leaves, dried thyme, and ground nutmeg to the pot.

Step 4

Bring the pot to a gentle simmer over medium heat, then reduce the heat to low.

Cover the pot and allow the pork to cook slowly, stirring occasionally, for 3 to 4 hours or until the pork is very tender and easily shredded.
