Ingredients

  • 1 pound beef stew meat
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons coconut oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon ginger, minced
  • 1 large potato, cubed
  • 2 medium carrots, sliced
  • 3 tablespoons tomato paste
  • 2 tablespoons curry powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 0.5 teaspoon cinnamon
  • 3 cups beef broth
  • 1 cup coconut milk
  • 1 bay leaf
  • 2 tablespoons fresh cilantro, chopped

Directions

Step 1

Season the beef stew meat with salt and black pepper.

Step 2

In a large pot, heat coconut oil over medium-high heat. Add the seasoned beef and brown on all sides. Remove and set aside.

Step 3

In the same pot, add the finely chopped onion and sauté until translucent, about 5 minutes.

Step 4

Add the minced garlic and ginger to the pot, cooking for an additional 2 minutes until fragrant.

Step 5

Stir in the cubed potato and sliced carrots, and cook for another 3 minutes.

Step 6

Add the tomato paste, curry powder, paprika, cumin, coriander, and cinnamon; stir well, letting the spices become aromatic, about 2 minutes.

Step 7

Return the browned beef to the pot. Pour in the beef broth and coconut milk, stirring to combine.

Step 8

Add the bay leaf, bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 2 hours or until beef is tender and the sauce has thickened.

Step 9

Remove the bay leaf. Adjust seasoning with additional salt and pepper, if necessary.

Step 10

Garnish with fresh cilantro before serving. Enjoy your Soy-Free Rich and Savory Beef Curry Sauce over rice or your choice of side.
