Ingredients

  • 300 grams All-purpose flour
  • 50 grams Sugar
  • 5 grams Salt
  • 7 grams Instant yeast
  • 180 milliliters Whole milk
  • 50 grams Unsalted butter
  • 1 large Egg
  • 250 grams Red bean paste
  • 30 milliliters Water
  • 15 milliliters Milk (for brushing)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, sugar, salt, and instant yeast.

Step 2

In a small saucepan, heat the whole milk and unsalted butter over low heat until the butter is melted. Let it cool to lukewarm.

Step 3

Beat the egg lightly in a small bowl and then add to the flour mixture.

Step 4

Pour the lukewarm milk and butter mixture into the dry ingredients. Mix well until the dough starts to come together.

Step 5

Knead the dough on a lightly floured surface for about 8-10 minutes until smooth and elastic.

Step 6

Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Step 7

Divide the red bean paste into 8 equal portions and set aside.

Step 8

Once the dough has risen, punch it down to remove excess air and divide it into 8 equal pieces.

Step 9

Flatten each piece of dough into a disk, place a portion of red bean paste in the center, and wrap the dough around it. Pinch the seams together to seal.

Step 10

Place the buns seam side down on a baking tray lined with parchment paper. Cover with a damp cloth and let them rise again for about 30 minutes.

Step 11

Preheat your oven to 180°C (350°F).

Step 12

Brush the tops of the buns with milk to give them a nice glaze.

Step 13

Bake the buns in the preheated oven for 12-15 minutes or until golden brown.

Step 14

Remove from the oven and let cool slightly before serving.
