Ingredients

  • 1 head Radicchio
  • 0.25 cup Fresh orange juice
  • 2 tablespoons Fresh lemon juice
  • 0.25 cup Extra-virgin olive oil
  • 1 teaspoon Honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 orange Orange segments
  • 0.25 cup Chopped toasted almonds
  • 2 tablespoons Chopped fresh parsley

Directions

Step 1

Remove the outer leaves of the radicchio if wilted or damaged and discard. Quarter the radicchio head and remove the core. Slice the radicchio into thin strips and place in a large salad bowl.

Step 2

Peel the orange and separate it into segments by cutting between the membranes. Add the orange segments to the salad bowl with the radicchio.

Step 3

In a small bowl, whisk together the fresh orange juice, fresh lemon juice, extra-virgin olive oil, honey, Dijon mustard, salt, and black pepper until well combined and emulsified.

Step 4
