Ingredients

  • 1 cup Peanut butter
  • 1/2 cup Honey
  • 1 teaspoon Vanilla extract
  • 2 cups Rolled oats
  • 1/2 cup Whey protein powder (vanilla or unflavored)
  • 2 tablespoons Chia seeds
  • 1/2 cup Almonds, chopped
  • 1/2 cup Dark chocolate chips
  • 1/4 cup Unsweetened shredded coconut

Directions

Step 1

In a medium saucepan over low heat, combine the peanut butter and honey. Stir gently until the mixture is smooth and creamy.

Step 2

Remove the saucepan from the heat and stir in the vanilla extract.

Step 3

In a large mixing bowl, combine rolled oats, whey protein powder, chia seeds, chopped almonds, and shredded coconut.

Step 4

Pour the warm peanut butter mixture over the dry ingredients. Stir well to ensure everything is evenly coated.

Step 5

Fold in the dark chocolate chips while the mixture is still warm, allowing them to partially melt into the clusters.

Step 6
