Ingredients

  • 2 cups almond flour
  • 1 cup oats
  • 0.5 cup whey protein powder, vanilla flavored
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, softened
  • 0.5 cup honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0.5 cup dark chocolate chips

Directions

Step 1

Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a baking sheet with parchment paper.

Step 2

In a large bowl, mix the almond flour, oats, whey protein powder, baking soda, baking powder, and salt together until well combined.

Step 3

In a separate bowl, cream the softened butter and honey together until smooth. Add the egg and vanilla extract, beating well until all are thoroughly mixed.

Step 4

Gradually add the dry ingredients to the wet ingredients, mixing until combined. The dough should be slightly sticky.

Step 5

Fold in the dark chocolate chips evenly throughout the dough.

Step 6

With a spoon or small cookie scoop, drop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Step 7

Bake in the preheated oven for 8 to 10 minutes, or until the edges are lightly golden. The centers may look slightly underbaked; they will firm up as they cool.

Step 8

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
