Ingredients

  • 500 grams Raw prawns, shelled and deveined
  • 2 tablespoons Rice flour
  • 1 tablespoon Cornstarch
  • 1 large Egg white
  • 1 tablespoon Fish sauce
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, minced
  • 2 tablespoons Spring onions, finely chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon White pepper
  • 1 teaspoon Sesame oil
  • 500 ml Vegetable oil (for frying)

Directions

Step 1

Start by placing the prawns on a chopping board. Using the back of a knife, smash the prawns several times then mince finely until a smooth paste is formed.

In a mixing bowl, combine the prawn paste with rice flour, cornstarch, egg white, fish sauce, minced garlic, ginger, spring onions, salt, white pepper, and sesame oil.

Mix thoroughly until all ingredients are well integrated and the mixture becomes slightly sticky.

Using your hands, shape the mixture into small balls, about 1-inch in diameter. Wet your hands slightly to prevent the paste from sticking.

Heat the vegetable oil in a deep pan over medium heat until it reaches 180°C (350°F).
