Ingredients

  • 12 oz gluten-free penne pasta
  • 2 tbsp olive oil
  • 1 medium yellow onion, chopped
  • 3 pieces garlic cloves, minced
  • 28 oz crushed tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.5 tsp red pepper flakes
  • 1 tsp salt
  • 0.5 tsp black pepper, freshly ground
  • 0.25 cup fresh basil leaves, chopped
  • 0.5 cup parmesan cheese, grated (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the gluten-free penne pasta and cook according to package instructions until al dente. Drain and set aside.

Step 2

In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.

Step 3

Add the minced garlic to the onions and sauté for another 1-2 minutes until fragrant.

Step 4

Pour in the crushed tomatoes and add the dried oregano, dried basil, red pepper flakes, salt, and black pepper. Stir to combine.

Step 5

Bring the sauce to a simmer and let it cook for about 15 minutes, stirring occasionally.

Step 6

Once the sauce has thickened slightly, add the cooked penne pasta to the sauce, tossing to coat the pasta thoroughly.

Step 7

Stir in the fresh basil leaves and allow the pasta to heat through, about 2-3 minutes.

Step 8

Serve the pasta hot. If desired, top with grated parmesan cheese before serving.
