  • 6 tablespoons Olive oil

  • 0.5 teaspoon Ground cayenne pepper
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Tomato paste
  • 1 tablespoon Apple cider vinegar
  • 4 tablespoons Water
  • 2 tablespoons Chopped parsley

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Wash and peel the potatoes, then cut them into 1-inch cubes.

Step 3

Place the potato cubes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and let them cook until just tender, about 5 minutes. Drain well and pat dry with a kitchen towel.

Spread the potatoes on a baking sheet. Drizzle with 4 tablespoons of olive oil and sprinkle with 0.5 teaspoon of salt, 0.5 teaspoon of smoked paprika, garlic powder, onion powder, and black pepper. Toss to coat evenly.
