Ingredients

  • 2 cups tapioca starch (yuca starch)
  • 1.5 cups freshly grated queso fresco (or farmer's cheese)
  • 4 tablespoons butter
  • 1 large egg
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 4 tablespoons milk

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the tapioca starch, grated queso fresco, baking powder, and salt. Mix well to evenly distribute the dry ingredients.

Step 3

Melt the butter over low heat in a small saucepan or in the microwave. Allow it to cool slightly.

Step 4

In a separate bowl, beat the egg until frothy and then mix in the milk and melted butter.

Step 5

Pour the wet ingredients into the dry ingredients. Mix until a dough forms. It should be smooth and slightly sticky.

Step 6

Scoop about 2 tablespoons of dough and roll it into a ball. Place the dough ball onto the prepared baking sheet. Repeat with the remaining dough, spacing the balls about 1 inch apart.

Step 7

Bake in the preheated oven for about 18-20 minutes, or until the breads are puffed and lightly golden on top.

Step 8

Remove the Pan de Yuca from the oven and let them cool slightly on the baking sheet. Serve warm.
