Ingredients

  • 400 g Capellini noodles (or rice noodles)
  • 4 cups Shrimp broth
  • 2 tbsp Vegetable oil
  • 4 cloves Minced garlic
  • 1 medium Onion, finely chopped
  • 1 tbsp Paprika
  • 300 g Ground pork
  • 2 tbsp Annatto powder
  • 2 tbsp Fish sauce (gluten-free)
  • 3 tbsp Cornstarch
  • 3 tbsp Water
  • 1 tsp Salt
  • 0.5 tsp Pepper
  • 3 large Hard-boiled eggs, sliced
  • 1 cup Crushed chicharrón (pork cracklings)
  • 0.5 cup Chopped green onions
  • 2 Lemon wedges
  • 200 g Shrimp, deveined and peeled

Directions

Step 1

Cook the capellini or rice noodles according to package instructions, drain, and set aside.

Step 2

In a large saucepan, heat the vegetable oil over medium heat. Add the minced garlic and onions and sauté until onions are translucent.

Add the ground pork to the pan, cooking until browned and fully cooked. Stir in paprika and annatto powder until well combined.

Pour in the shrimp broth and bring the mixture to a boil. Add the fish sauce, salt, and pepper.

In a small bowl, combine the cornstarch and water to create a slurry. Slowly pour this into the boiling broth while stirring continuously until the sauce thickens.
