  • 1 medium onion, finely chopped
  • 3 pieces garlic cloves, minced
  • 1 teaspoon fresh ginger, grated
  • 400 grams canned chopped tomatoes
  • 200 milliliters coconut milk
  • 200 milliliters water
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 2 tablespoons fresh cilantro, chopped (for garnish)

Directions

Step 1

Heat the coconut oil in a large pan over medium heat.

Step 2

Add the chopped onion and sauté until golden, about 5 minutes.

Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

Add the ground turmeric, cumin, coriander, garam masala, and chili powder to the pan. Stir well to coat the onion mixture with spices.
