Begin by soaking the black-eyed beans in water for at least 1 hour to soften them.
Once soaked, rub the beans between your palms to peel off the skins. Rinse and repeat until the skins have been removed as much as possible.
Blend the peeled beans, red bell peppers, onion, and scotch bonnet peppers with 1 cup of water until smooth. You may need to do this in batches.
Transfer the blended mixture to a large mixing bowl. Add the vegetable oil, chicken stock, and salt, then stir well to combine.
Add in the ground crayfish and mix thoroughly. Taste and add more salt or spices if needed.
Beat the eggs and stir them into the mixture to bind the ingredients.
Grease your moi moi containers or ramekins with vegetable oil. You can also use banana leaves, foil bowls, or heatproof nylon bags.
Pour the mixture into the prepared containers, filling them about three-quarters full to allow room for expansion during cooking.
Arrange the containers in a large pot or a steaming pan. Fill the bottom of the pot with water, being careful not to submerge the containers in the water.
Cover the pot with a lid, wrap it with a cloth or foil to prevent steam from escaping, and steam the moi moi over medium heat for about 60 minutes.
Check the water level periodically and add more hot water as needed to prevent the pot from drying out.
To test if the moi moi is done, insert a toothpick or skewer into the center. If it comes out clean, it's ready.
Remove the moi moi from the pot and allow it to cool for a few minutes before serving.
