Ingredients

  • 1 large red bell pepper
  • 2 cups broccoli florets
  • 1 large carrot
  • 1 medium zucchini
  • 1 cup snap peas
  • 1 cup baby corn
  • 1 tablespoon, grated ginger
  • 2 minced garlic cloves
  • 2 tablespoons olive oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon cornstarch
  • 2 tablespoons water

Directions

Step 1

Slice the red bell pepper into thin strips.

Step 2

Cut the broccoli florets into bite-sized pieces.

Step 3

Peel and julienne the carrot.

Step 4

Slice the zucchini into thin half-moons.

Step 5

In a small bowl, combine rice vinegar, maple syrup, salt, black pepper, cornstarch, and water. Mix well to create a sauce and set aside.
