Ingredients

  • 6 pieces large eggs
  • 0.5 cup heavy cream
  • 0.25 cup milk
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup grated cheddar cheese
  • 0.5 cup cooked bacon bits
  • 0.5 cup chopped spinach
  • 0.5 cup diced red bell pepper
  • 0.25 cup chopped onion
  • 0.25 teaspoon cracked black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin with a little olive oil.

Step 2

In a medium-sized sauté pan, heat the olive oil over medium heat. Add the chopped onion and red bell pepper. Cook for about 5 minutes until the vegetables are soft.

Step 3

Add the chopped spinach to the pan and cook for another 2 minutes until wilted. Set aside to cool slightly.

Step 4

In a large bowl, whisk together the eggs, heavy cream, milk, salt, and black pepper until well combined.

Step 5

Fold in the cooked onion, bell pepper, spinach, cheddar cheese, and bacon bits into the egg mixture.

Step 6

Pour the egg mixture evenly into the prepared muffin cups, filling each about 3/4 full.

Bake in the preheated oven for 20-25 minutes or until the tops are golden and the eggs are set.
