  • 2 tablespoons Lemon juice
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Fresh mint, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

In a large mixing bowl, combine the chickpeas, diced cucumber, halved cherry tomatoes, chopped red onion, diced red bell pepper, and sliced Kalamata olives.
