Ingredients

  • 2 pieces boneless, skinless chicken breast
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 pieces garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 pieces whole wheat tortillas
  • 2 cups fresh baby spinach
  • 1 piece cucumber, thinly sliced
  • 0.5 piece red onion, thinly sliced
  • 0.5 cup feta cheese, crumbled
  • 0.25 cup Kalamata olives, pitted and chopped

Directions

Step 1

In a small bowl, mix together 1 tablespoon olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.

Place the chicken breasts in a shallow dish or resealable plastic bag and pour the marinade over them. Let the chicken marinate for at least 10 minutes, or longer if time allows.

Heat the remaining 1 tablespoon of olive oil in a skillet over medium-high heat.
