In a large bowl, combine 400 grams of all-purpose flour and 1 teaspoon of salt. Create a well in the center.
Add 150 milliliters of water and 1 whole egg into the well. Gently beat the egg with a fork and gradually incorporate the flour to form a dough.
Transfer the dough to a lightly floured surface and knead for 8-10 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.
For the filling, finely chop 1 medium onion and combine it with 200 grams of ground beef, 0.5 teaspoon of black pepper, and 0.25 teaspoon of red pepper flakes in a bowl. Mix well.
After the dough has rested, divide it into two equal parts. Roll out each piece into a thin sheet, about 1-2 mm thick.
Cut the dough into small squares, approximately 4x4 cm.
Place a small teaspoon of the beef filling into the center of each square. Fold the corners over the filling to form a dumpling and seal the edges by pinching them together firmly.
Bring 2000 milliliters of water to a boil in a large pot. Add a pinch of salt and 1 tablespoon of olive oil.
Carefully drop the dumplings into the boiling water. Cook for about 8-10 minutes or until they float to the surface and are fully cooked.
In a small saucepan, melt 50 grams of butter over low heat. Stir in 1 teaspoon of dried mint and set aside.
For the yogurt sauce, crush 2 garlic cloves and mix them into 250 grams of plain Greek yogurt.
Drain the cooked manti and divide them among serving plates.
Drizzle the garlic yogurt sauce over the dumplings, followed by the melted mint butter.
Serve immediately and enjoy your homemade soy-free manti.
