Ingredients

  • 1 medium-sized (about 500 grams) Bottle Gourd (Loki)
  • 1 medium, finely chopped Onion
  • 2 medium, finely chopped Tomato
  • 4 cloves, minced Garlic
  • 1 inch, grated Ginger
  • 1 finely chopped Green Chili
  • 0.5 teaspoon Turmeric Powder
  • 0.5 teaspoon Red Chili Powder
  • 1 teaspoon Coriander Powder
  • 1 teaspoon Cumin Seeds
  • 0.5 teaspoon Garam Masala
  • 1 teaspoon (or to taste) Salt
  • 2 tablespoons, chopped Cilantro
  • 2 tablespoons Cooking Oil
  • 1 cup Water

Directions

Step 1

Peel and chop the bottle gourd into small cubes, about 1-inch pieces. Set aside.

Heat oil in a large pan or kadhai over medium heat.

Step 3

Add cumin seeds and allow them to splutter.

Step 4

Once the cumin seeds splutter, add the chopped onions and sauté until they turn translucent.

Add the minced garlic, grated ginger, and chopped green chili. Sauté for another 2 minutes until fragrant.

Add the chopped tomatoes and cook until they become soft and mushy.

Stir in turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook the spices for 1-2 minutes.

Add the chopped bottle gourd to the pan and mix everything well.
