Ingredients

  • 250 grams brown or green lentils
  • 2 tablespoons olive oil

  • 2 medium celery stalks
  • 3 cloves garlic
  • 2 medium potatoes
  • 1.5 liters vegetable broth
  • 2 pieces bay leaves
  • 1 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons fresh parsley

Directions

Step 1

Rinse the lentils under cold water, picking out any debris or damaged lentils. Set aside.

Step 2

Dice the onion, carrots, and celery. Mince the garlic cloves. Peel and dice the potatoes.

Step 3

In a large pot, heat the olive oil over medium heat. Add the onions, carrots, and celery. Sauté for about 5 minutes until the onions are translucent.
