Ingredients

  • 2 pounds Beef short ribs
  • 1 cup Coconut aminos
  • 0.5 cup Pineapple juice
  • 0.25 cup Brown sugar
  • 2 tablespoons Sesame oil
  • 4 cloves Minced garlic
  • 1 tablespoon Grated ginger
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Gochugaru (Korean red chili flakes)
  • 4 stalks Green onions, finely chopped
  • 1 teaspoon Black pepper

Directions

Step 1

Begin by preparing the short ribs. Rinse the beef under cold water and pat them dry with a paper towel. Set aside.

Step 2

In a mixing bowl, combine coconut aminos, pineapple juice, brown sugar, sesame oil, minced garlic, grated ginger, rice vinegar, gochugaru, green onions, and black pepper. Stir the mixture until the brown sugar is fully dissolved and the ingredients are well combined.

Step 3

Place the short ribs in a large resealable plastic bag and pour the marinade over the ribs. Seal the bag, squeezing out as much air as possible, and massage the marinade into the meat until thoroughly coated.

Step 4

Refrigerate the ribs in the marinade for at least 4 hours, preferably overnight, to allow the flavors to fully infuse.

Step 5

Preheat a grill to medium-high heat. Remove the ribs from the marinade and shake off any excess liquid.

Step 6

Place the ribs on the grill and cook for approximately 5 to 7 minutes on each side, or until the meat is cooked through and has a nice char.

Step 7

Transfer the ribs to a serving plate and let rest for a few minutes to redistribute the juices.

Step 8

Garnish with additional chopped green onions and serve hot. These ribs pair well with steamed rice and kimchi.
