Ingredients

  • 2 cups Almond flour
  • 2 tablespoons Coconut flour
  • 1 teaspoon Xanthan gum
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 2 large Egg whites
  • 0.75 cup Warm water
  • 1 tablespoon Olive oil

Directions

Step 1

In a large mixing bowl, combine almond flour, coconut flour, xanthan gum, baking powder, and salt. Whisk together until well incorporated.

Step 2

Add the egg whites, warm water, and olive oil to the dry ingredients. Mix using a spatula or your hands until a dough forms.

Step 3

Knead the dough lightly for about 1-2 minutes until it becomes smooth and pliable.

Divide the dough into 8 equal portions. Roll each portion into a ball.

Place one dough ball between two sheets of parchment paper. Use a rolling pin to roll it out into a circle approximately 6 inches in diameter and about 1/8 inch thick. Repeat with the remaining dough balls.

Heat a non-stick skillet or griddle over medium heat. Once hot, carefully remove the top parchment paper and place the tortilla onto the skillet.

Cook for about 1-2 minutes on each side, or until light golden spots appear and the tortilla easily lifts from the skillet.

Transfer the cooked tortilla to a plate and cover with a clean kitchen towel to keep warm. Repeat the process with the remaining tortillas.
