  • 2 pounds oxtail
  • 8 cups water
  • 1 tablespoon salt
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 medium eggplant, sliced
  • 1 medium banana hearts, sliced
  • 1 cup peanut butter
  • 2 tablespoons annatto oil
  • 3 tablespoons rice flour
  • 1 cup green beans
  • 1 bunch bok choy
  • 1 teaspoon black pepper

Directions

Step 1

Rinse the oxtail under cold water, then place it in a large pot. Add 8 cups of water and 1 tablespoon of salt. Bring to a boil, then reduce the heat to a simmer. Skim off any foam that rises to the surface. Simmer for about 1.5 to 2 hours, or until the oxtail is tender.

Step 2

Once the oxtail is tender, remove it from the pot and set aside. Reserve about 4 cups of the beef broth.

Step 3

In a large pan, heat 2 tablespoons of annatto oil over medium heat. Sauté the minced garlic and chopped onion until they are soft and fragrant.

Add the sliced eggplants and banana hearts to the pan. Cook until they are slightly tender.

Combine 1 cup of peanut butter with about 2 cups of the reserved beef broth, stirring until smooth.
