  • 8 corn tortillas
  • 1 cup diced tomatoes
  • 1 ripe avocado, sliced
  • 1 cup shredded lettuce

Directions

Step 1

Heat the olive oil in a large non-stick skillet over medium heat.

Add the chopped onion and minced garlic to the skillet. Sauté for 3-4 minutes until the onion is softened and translucent.
