Ingredients

  • 2 cups Rice flour
  • 2 cups Water
  • 0.5 teaspoons Salt
  • 1 tablespoons Coconut oil

Directions

Step 1

In a medium saucepan, bring 2 cups of water to a boil over medium heat. Add the salt and coconut oil to the boiling water.

Step 2

Reduce the heat to low, and slowly add the rice flour to the boiling water, stirring continuously with a wooden spoon to avoid lumps.

Step 3

Once all the rice flour is incorporated and a soft dough forms, remove the saucepan from heat. Allow the dough to cool slightly until safe to handle.

Step 4

Knead the dough gently for about 3-4 minutes until it becomes smooth and pliable.

Step 5

Divide the dough into small portions. Grease an idiyappam maker or a string hopper press with little coconut oil.

Step 6

Fill the greased idiyappam maker with a portion of dough. Squeeze out the dough in circular motions onto idli plates or perforated steaming trays to form thin noodle-like circles.

Step 7

Place the trays in a steamer and steam for 8-10 minutes or until the idiyappam is cooked through and firm.

Step 8

Remove the trays from the steamer, let them cool slightly, and then gently remove the idiyappam using a spatula.

Step 9

Serve hot with coconut chutney, vegetable stew, or your favorite curry.
