Ingredients

  • 2 cups unsweetened shredded coconut
  • 0.5 cup coconut cream
  • 0.75 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 16 pieces roasted whole almonds
  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil

Directions

Step 1

In a large mixing bowl, combine the shredded coconut, coconut cream, powdered sugar, and vanilla extract. Mix until the ingredients come together to form a thick, sticky mixture.

Step 2

Line a baking sheet with parchment paper. Using your hands, scoop about 1-2 tablespoons of the coconut mixture and shape it into a rectangular bar about 2 inches long. Repeat until all the mixture is used, making approximately 16 bars.

Step 3

Gently press one almond onto the top of each coconut bar.

Step 4

Place the baking sheet in the freezer for about 15 minutes to allow the bars to firm up.

Step 5

While the bars are chilling, create a double boiler setup by placing a heat-safe bowl over a pot of simmering water. Add the dark chocolate chips and coconut oil to the bowl, stirring until the chocolate is completely melted and smooth.

Step 6

Remove the coconut bars from the freezer. Using a fork or dipping tool, carefully dip each bar into the melted chocolate until completely coated, letting any excess chocolate drip off. Place the coated bars back onto the parchment-lined baking sheet.

Step 7

Once all bars are coated, place the baking sheet in the refrigerator for about 30 minutes, or until the chocolate is fully set.

Step 8

Enjoy your homemade, soy-free Almond Joy bars or store them in an airtight container in the refrigerator for up to one week.
