Ingredients

  • 2 racks rack of lamb
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh rosemary
  • 2 tablespoons fresh thyme
  • 2 tablespoons fresh parsley
  • 4 cloves garlic cloves
  • 3 tablespoons olive oil
  • 1 tablespoon lemon zest
  • 2 tablespoons dijon mustard
  • 1 cup breadcrumbs

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Remove any excess fat from the lamb and trim the fat cap, if necessary.

Step 3

In a small bowl, combine salt and pepper, and season the lamb racks evenly on all sides.

Chop the fresh rosemary, thyme, and parsley finely. Mince the garlic cloves.
