Ingredients

  • 2 pounds Pork bones
  • 10 cups Water
  • 1 large Onion
  • 4 whole Garlic cloves
  • 2 medium Carrots
  • 2 medium Celery stalks
  • 1 large Potato
  • 1 whole Bay leaf
  • 1 teaspoon Thyme
  • 2 teaspoons Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Parsley

Directions

Step 1

Rinse the pork bones under cold water. Place them in a large pot and cover with 10 cups of cold water.

Step 2

Bring the pot to a boil over high heat. Once boiling, reduce the heat and let it simmer for 5 minutes.

Step 3

Drain the bones and rinse them under cold water to remove any impurities. This step helps ensure a clear soup.

Step 4

Return the bones to the pot and add 10 cups of fresh water. Set the pot over medium heat.

Step 5

Peel and quarter the onion, peel the garlic cloves, and add them to the pot.

Step 6

Peel and cut the carrots and celery into large chunks, and add them to the pot.

Step 7

Peel and dice the potato into 1-inch cubes, then add it to the pot.

Step 8

Add the bay leaf, thyme, salt, and black pepper to the pot. Stir to combine.

Step 9

Bring the pot to a gentle simmer over medium-low heat. Cover and let the soup cook for approximately 2 hours.

Step 10

During the last 15 minutes of cooking, taste the soup and adjust seasoning if needed.

Step 11

Remove the bay leaf and discard. Remove the pork bones from the pot and let them cool slightly.

Step 12

Once cool enough to handle, remove any remaining meat from the bones and return the meat to the soup.

Step 13

Chop the parsley finely and add it to the soup just before serving.

Step 14

Ladle the soup into bowls and serve hot. Enjoy your hearty, soy-free pork bone soup!
