Ingredients

  • 4 pieces Large eggs
  • 2 tablespoons Milk
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 Chicken sausage links, sliced
  • 1 Red bell pepper, diced
  • 1 cup Spinach leaves, fresh
  • 1 Avocado, sliced
  • 4 pieces Whole wheat tortillas
  • 1 cup Cheddar cheese, shredded
  • 0.5 cup Salsa (optional)

Directions

Step 1

In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

Step 2

Heat 1 tablespoon of olive oil in a non-stick pan over medium heat.

Step 3

Add the sliced chicken sausage and cook until lightly browned, about 4-5 minutes. Remove from the pan and set aside.

In the same pan, add the remaining tablespoon of olive oil and add the diced red bell pepper. Sauté for 3-4 minutes until slightly softened.
