Ingredients

  • 2 pounds beef chuck roast
  • 1 cup pineapple juice
  • 0.25 cup apple cider vinegar
  • 0.25 cup honey
  • 2 tablespoons tomato paste
  • 3 minced garlic cloves
  • 1 tablespoon grated ginger root
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large, chopped onion

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

In a small bowl, combine pineapple juice, apple cider vinegar, honey, tomato paste, minced garlic, grated ginger, smoked paprika, ground cumin, sea salt, and black pepper. Mix well to form a marinade.

Step 3

Heat olive oil in a large oven-proof Dutch oven over medium-high heat.

Step 4

Season the beef chuck roast with additional salt and pepper, then sear in the hot oil until all sides are browned, about 4 minutes per side. Remove the beef and set aside.

Step 5

In the same pot, add the chopped onion and sauté until softened, about 3 minutes.

Step 6

Return the beef to the pot and pour the prepared marinade over it.

Step 7

Cover the pot with a lid and place it in the preheated oven. Allow it to cook for about 4 hours or until the beef is tender and shreds easily.

Step 8

Once cooked, remove the beef from the pot and let it rest for a few minutes before shredding with forks.

Step 9

Serve the shredded beef with some of the cooking juices and enjoy your Soy-Free Hawaiian Barbecue Beef!
