Ingredients

  • 2 large red bell peppers
  • 2 medium zucchini
  • 2 medium yellow squash
  • 2 medium red onion
  • 8 large button mushrooms
  • 16 pieces cherry tomatoes
  • 0.25 cup olive oil
  • 2 tablespoons lemon juice
  • 3 minced garlic cloves
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 0.5 teaspoon cumin powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 8 pieces wooden skewers

Directions

Step 1

Soak the wooden skewers in water for at least 30 minutes to prevent burning.

Step 2

Cut the red bell peppers, zucchini, yellow squash, and red onions into 1.5-inch pieces.

Step 3

In a large mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, dried thyme, cumin powder, salt, and black pepper. Whisk together to form the marinade.

Step 4

Add the cut vegetables, mushrooms, and cherry tomatoes to the bowl with the marinade. Toss to ensure all the vegetables are evenly coated. Allow to marinate for 15-20 minutes.

Step 5

Preheat the grill to medium-high heat.

Step 6

Thread the marinated vegetables onto the soaked skewers, alternating vegetables to create a colorful assortment.

Step 7

Place the skewers on the preheated grill. Cook for about 12-15 minutes, turning occasionally, until the vegetables are tender and slightly charred.

Step 8

Remove from the grill and serve immediately, either on the skewer or removed onto a serving platter.
